COURSE INFORMATION

With a growing demand for professional chef's and the high profile success of Scottish chef's, there is a growing need for experienced professionals in professional kitchens. Many chefs in the sector have been promoted on the basis of their experience but without formal qualifications. This PDA will allow you to gain key skills at a high level to not only enhance your skills but to allow you to support and develop others. This course will support the development of highly skilled chefs in professional kitchens.

You will learn how to produce a range of desserts such as: 

  • Plated desserts
  • Petite gateaux
  • Entremets gateaux
  • Miniatures
  • Marzipan models
  • Pastillage displays
  • Chocolate bonbons
  • Petit fours 
  • Simple showpieces using chocolate, boiled sugar and/or isomalt
  • 1 year - one afternoon and evening per week.
  • Professional cookery practical and knowledge.
  • Food hygiene.
  • SCQF Level 6 qualification in a relevant are or relevant industry experience.
  • HNC: Professional Cookery 
  • HNC: Professional Cookery with Patisserie
  • Pastry Chef
  • Head Chef
  • Sous Chef
  • Cost £720 however you may be eligible for partial funding through a Part time Fee Grant from SAAS should you meet the eligibility criteria.
