Professional Cookery student, Bryce Dickson, recently travelled to China to attend the China Seafood Expo.

Bryce, alongside former Fife College lecturer, Scott Lyall, and former HNC student, Thomas McNeil - showed off their culinary skills at the world’s largest seafood expo. They operated their own stall at an exhibition centre, preparing, cooking and serving seafood samples to buyers and sellers attending the expo.  

Bryce made the journey to East Asia for the China Seafood Expo in Qingdao to assist Chef Lyall, who has been to the expo previously.

Of this amazing experience, Bryce said: “It gave me an insight to what the cooking and hospitality industry is like. It will be great for my future career, and also just as a personal experience.

“I also gained a lot of knowledge of seafood and the best ways to cook and present it. As well as this, I took new ideas and recipes from the expo that will help me with my college course and future career.”

Bryce garnered a lot of experience from the trip and would relish another similar opportunity: “If I ever get the chance to do it again then I will because, although this was my first time and it was new and stressful to me, I’ll know exactly what to do next time and be able to do it even better.”

As well as showcasing some of the finest seafood that Scotland has to offer, he also had time to take in some of the sights of his surroundings, visiting the world-famous Great Wall of China too.
