COURSE INFORMATION

Many chefs in the sector have been promoted t on the basis of their experience but without formal qualifications. This PDA will allow you to gain key skills at a high level to not only enhance your skills but to allow you to support and develop others. This course will support the development of highly skilled chefs in professional kitchens.

  • You will learn how to produce a range of desserts such as
  • Plated desserts
  • Petite gateaux
  • Entremets gateaux
  • Miniatures
  • Marzipan models
  • Pastillage displays
  • Chocolate bonbons
  • Petit fours and simple showpieces using chocolate, boiled sugar and/or isomalt.
  • 1 year - one afternoon and evening per-week.
  • Professional cookery practical and knowledge, food hygiene.
  • SCQF Level 6 qualification in a relevant are or relevant industry experience
  • HNC Professional Cookery
  • HNC Professional Cookery with Patesserie
